More from the Cheese Book

We have made a few more trips around Wisconsin, most recently to the World Championship Cheese contest in Madison.

While we were there, we were lucy enough to be invited to view some more cheese plants on a tour with the international judges from the contest.

Not only did we get to see the inner workings of more cheeseplants, but we also learned the basics of how to grade cheese.

This is a photo of cheese being submerged in brine while it is pressed.

We also visited the home of Limberger cheese again, and I shot some fun details from around the plant. I love all the stamps they use to mark the cheese packages.
